Honeycrisp Dress
Honeycrisp Dress has that bright florality of a ripe red apple peel with a vanilla sweetness. This Illubabor Forest variety is one of three varieties grown at Gesha Village, in the Dimma block at a minimum of 1966masl (~9°N). Illubabor Forest is a cultivar taken from the Illubabor Forest in Ethiopia, and has lots of promise for disease resilience and flavor profiles. This coffee has been put through a mechanical demucilager, then through a full wet fermentation, where it’s soaked for 12 to 36 hours and then channel-washed. The coffee was then shade-dried for two to three days until it reached 30 percent moisture content, then sun-dried on raised African beds for 12-19 days until it reached 11 percent moisture.
Gesha Village is not just a leader in the specialty coffee industry for its amazing coffee flavor profiles it produces, but also in its commitment to social and environmental goals. In 2021 Gesha Village High school was inaugurated. This is the first high school in that area and an incredibly important investment in the local community. The farms also practice revitilazation of native terroir to grow alongside farm coffee trees,water recirculation and extensive natural treatment of wastewater, composting of over 300 tons of compost per annum, and an apiculture program to promote bees and honey production.
