Ambrosia No. 1
About the species: C. liberica is a different species of coffee from arabica, meaning that it has different aromatic compounds, acids, lipids, sugars, caffeine content, and ideal growing conditions from arabica. It grows very tall (up to 20m), and is very resistant to two major diseases affecting coffee, being resistant to nematodes that can often eat arabica roots, and it is immune to coffee leaf rust. Liberica does however contain significantly more sugar than arabica, making it more susceptible to mold growth and regular pests during open fermentations, but leading to lots of fuel for intentional fermentations. The lower caffeine content not only makes liberica less bitter, but also leads to an increased perception of sweetness in the brew.
About the producer: 96B is a cafe, roastery and producer in Vietnam who began the 96B Liberica Project group in 2023 with the goal to transform the Huong Hoa region of Quang Tri into a high quality liberica growing region to bring about a better economic advantage, as arabica coffees grown in Huong Hoa are considered low quality due to its lower elevation(600masl). Despite the lower elevation and being an extremely remote location, Huong Hoa has multiple advantages: a plethora of old liberica cultivars brought by the French in the 1900s, an ideal climate (24-26°C) and a higher humidity than the rest of the province. Working alongside like-minded and innovative farmers, 96B's philosophy of being always analytical, consistent yet improving, inclusive, and experimental means that they are always pushing the boundaries and have fun doing so!
