Peachamara
Janson is one of the Jindo's favorite farms, creating amazingly aromatic experiences consistently through coffee. This lot is a pacamara varietal that is the result of crossing the varietals Pacas with maragogipe (hence Paca-mara), inheriting its large size from maragogipe (maragogipe are also known as 'elephant beans'). Pacamara is not genetically homogenous and therefore plants are not generationally stable. Extra care must be taken with pacamara due to this generational instability, however the payoff is worth it as it often contains a deep, full bodied umami reminiscent of lactofermented fruit with a super satisfying complexity and body.
